
Preheat the oven to 200C/400F/Gas 6.
Heat the oil in an ovenproof pan and fry the sausages for 2-3 minutes, turning frequently until pale golden-brown on all sides. Add the onion to the pan and stir well until cooked in the cooking juices. Transfer to the oven to roast for 10-12 minutes, or until the sausages are cooked through.
Remove the pan from the oven and return to the hob. Heat the pan over a medium heat and pour in the red wine, scraping up any browned bits from the bottom of the pan usin a wooden spoon, to de-glaze the pan. Continue to heat until the volume of liquid has reduced by one-third, then stir in the butter. Serve immediately.
