
A simple summery berry twist on the mojito, this cocktail is really easy to make.
6 fresh mint leaves
4 fresh raspberries, plus 1 extra to serve
20ml/¾fl oz freshly squeezed lime juice
1 tsp sugar syrup
1 tbsp black raspberry liqueur
35ml/1¼fl oz golden rum
splash ginger ale, to top up
1 sprig mint, to serve
Place the mint leaves and raspberries into a highball glass. Add some ice.
Add the lime juice, sugar syrup, black raspberry liqueur and golden rum. Stir well with a long-handled spoon.
Top up the cocktail with ginger ale. Garnish the glass with the mint sprig and a raspberry.
