
3 slices prosciutto
3 scallops, cleaned and coral removed, shells reserved and warmed in the oven
1 tbsp olive oil
Take each slice of ham and fold it in half lengthways. Wrap the ham around each of the scallops, and secure with a wooden cocktail stick.
Drizzle the oil over the scallops and sear in a hot pan for 4-5 minutes, or until the scallops are just cooked through.
Serve each scallop back in its shell.
