
oil for deep frying
50g/1¾oz cornflour
1 free-range egg white
30ml/1fl oz ice-cold fizzy water
6 prawns
6 ready-made rice pancakes
150g/5¼oz mixed stir-fry vegetables, from a packet
1 tbsp oyster sauce
Heat the oil for deep frying. (CAUTION: Hot oil can be very dangerous. Do not leave unattended.)
Mix the cornflour, egg and water together to make a batter.
Divide the prawns, mixed stir-fry vegetables and oyster sauce between the rice pancakes and wrap them to form six pancakes.
Dip the prawn parcels in the batter and then put straight into the hot oil and deep fry for 2-3 minutes or until crisp and golden. Drain on kitchen paper and serve.
