Preparation method

  1. Place the egg yolk into a food processor and blend.

  2. While continuing to blend, gradually add the white wine vinegar and olive oil to create a mayonnaise consistency.

  3. Add the remaining ingredients and blend.

  4. Meanwhile, fill the avocado with the prawns.

  5. Drizzle the prawns with the Bloody Mary sauce and garnish with the lemon wedge.
