Japanese-style chilli prawn canapés

Simple prawns are boosted with the flavour of lime, wasabi and chilli - not for the fainthearted, but great with a cold beer.

For the prawns

  • 20 large Mediterranean prawns, cooked and peeled
  • 2 limes, zest only
  • 1 red chilli, seeds removed, very finely chopped

For the Japanese mayonnaise

  • 100g/4oz good-quality mayonnaise
  • 2-3 tsp ready-made wasabi paste, or to taste (available from supermarkets and Japanese stores)
  • 2 spring onions, finely chopped
  • 1-2 tbsp Japanese rice wine
  • 1 lime, zest only, plus juice from ½ the lime


  1. For the prawns, mix the prawns with the lime zest and chilli and set aside, covered, to marinate in the fridge for at least one hour.

  2. Meanwhile, for the Japanese mayonnaise, mix all the Japanese mayonnaise ingredients together and transfer the mixture to a serving bowl.

  3. Arrange the prawns on a plate and serve with the Japanese mayonnaise, for dipping.
