
Dried fruit and cider are the perfect foil for pork in this simple but delicious dish.
175g/6oz dried apricots
175g/6oz prunes
115g/4oz dried or fresh apples
150ml/5fl oz dry cider
½ tsp cinnamon
2 tbsp vegetable oil
1kg/1lb 2oz pork shoulder or loin
1 large onion, chopped
Preheat the oven to 180C/350F/Gas 4.
Place the fruit, cider and cinnamon into a pan. Bring to the boil and allow to simmer for five minutes.
Heat the oil in a roasting tin and brown the pork on all sides. Add the chopped onion and pour over the fruit mixture. Cover with foil and cook for about one hour, basting from time to time, or until the pork is cooked through.
Type the ingredients you want to use, then click Go. For better results you can use quotation marks around phrases (e.g. "chicken breast"). Alternatively you can search by chef, programme, cuisine, diet, or dish (e.g. Lasagne).
