Plum daiquiri

Ingredients

  • 1 ripe red plum, stone removed, flesh cut into quarters, plus 1 slice, to garnish

  • 1 tbsp plum liqueur

  • 1 tbsp fresh lime

  • 2 tsp sugar syrup

  • 50ml/2fl oz anejo golden rum

Preparation method

  1. Place the plum quarters into a cocktail shaker and mash lightly to release the juices.

  2. Add the plum liqueur, fresh lime, sugar syrup and anejo rum.

  3. Add some crushed ice, cover with a lid and shake well. Strain into a tumbler and garnish with the reserved plum slice.
