The tart plum flavour cuts through the chocolate in these easy sweet treats. Serve with coffee to end a meal.
Melt the butter in a large pan over a medium heat. Add the plums and fry for 2–3 minutes until they begin to soften.
Stir in the sugar and cook for 4–5 minutes until the sugar begins to caramelise. Stir in the port and simmer over a low heat for 3–5 minutes until slightly thickened.
Remove from the heat and stir in the nutmeg, if using.
Melt the chocolate in a heatproof bowl set over a pan of simmering water. (Do not let the base of the bowl touch the water.)
Once the chocolate has melted, add four tablespoons of the plum and port sauce and mix well. Spoon into small petit fours cases and refrigerate until firm.
This recipe uses a base of a port and plum sauce to make the chocolates, but makes more of the sauce than is needed for the recipe. Store the excess in a jar in the fridge for 3 days, and serve with meat dishes.
