Pineapple and sage mojito


  • 4 fresh sage leaves, plus extra to serve

  • 25ml/1fl oz pineapple purée, made by blending 2-3 pineapple chunks until smooth, plus 1 extra pineapple chunk, to serve

  • 25ml/1fl oz freshly squeezed lime juice

  • 2 tsp sugar syrup

  • 50ml/2fl oz gold rum

  • crushed ice

Preparation method

  1. Crush the sage leaves lightly (muddle) in a sling glass using a long-handled spoon.

  2. Add the pineapple purée, lime juice, sugar syrup, gold rum and ice. Stir to combine.

  3. To serve, hook the pineapple chunk and sage leaf over the side of the glass.
