
½ cucumber, peeled, halved, seeds removed
3 tbsp white wine vinegar
1 tbsp caster sugar
1 tsp chilli relish
1 tbsp chopped fresh dill
fresh coriander leaves, to garnish
Thinly slice the cucumber and place into a bowl. Add the remaining ingredients and stir well.
Leave to marinate for at least ten minutes, or overnight, covered in the fridge, if time permits.
Garnish with coriander leaves and serve as a side dish to meat, poultry, fish or rice dishes.
