• ½ fresh ripe red pear, peeled, core removed, diced, crushed with a fork, plus 1 slice pear, to serve

  • 2 tsp caster sugar

  • 25ml/1fl oz freshly squeezed lemon juice

  • 25ml/1fl oz tequila

  • 25ml/1fl oz pear brandy

  • ice

Preparation method

  1. Place the crushed red pear, sugar, lemon juice, tequila and pear brandy into a cocktail shaker. Add ice and shake well.

  2. To serve, strain the mixture into a large Martini glass. Hook the slice of pear over the side of the glass.
