Place the peas, stock, cream, mint and garlic into a saucepan and simmer for ten minutes.
Add the Brie and use a hand blender to blend until smooth.
Season, to taste, with salt and freshly ground black pepper and pour into a bowl.
Drizzle with olive oil and serve with the toasted ciabatta on the side.
