Papaya mousse


  • 150ml/5fl oz double cream, whipped until stiff

  • 100g/3½oz papaya, peeled, seeds removed and finely chopped

  • 2 tbsp runny honey

  • 1 tbsp papaya, cut into small cubes, to garnish

Preparation method

  1. Place the cream, chopped papaya and one tablespoon of honey into a bowl and fold together.

  2. Place an oiled 5cm/2in chefs' ring into the centre of a plate and spoon in some of the mixture.

  3. To serve, remove the chefs' ring, drizzle over the remaining tablespoon of honey and garnish with the papaya cubes on top.
