Trust us on this one. A savoury onion ‘cake’ is topped with cream cheese, smoke salmon slices, almonds and chilli jam to look like a giant cupcake!
Equipment and preparation: you will need a 20cm/8in greased, lined cake tin.
Sieve the flour and mix in the onion powder, salt, cayenne pepper and onion seeds. Grease and line a 20cm/8in cake tin.
Preheat the oven to 200C/400F/Gas 6. Break the eggs into a mixing bowl and add the sugar.
Using a hand-held whisk or electric beater, whisk the mixture until it triples in volume and becomes thick, white and fluffy.
Using a metal spoon, fold in the sieved flour and other ingredients very carefully and then mix in the melted butter.
Pour the mixture into the lined cake tin.
Bake the cake for 30 minutes, or until risen, golden-brown and set.
Remove the cake from the oven and cool on a wire rack.
To serve, whisk the cream cheese in a bowl until smooth and spread it over the sponge. Decorate in the style of a giant cupcake with the remaining topping ingredients.
