
100g/3½oz butter beans from a can, rinsed and drained
1 tbsp wholegrain mustard
3 tbsp olive oil
1 tsp lemon juice
sea salt and freshly ground black pepper
2 slices french bread
1 garlic clove, peeled and halved
Place the butterbeans, mustard, olive oil and lemon into a food processor and blend until smooth. Season, to taste, with salt and freshly ground black pepper.
Heat a griddle pan until smoking and place the bread onto it. Griddle for two minutes on each side, then remove and rub with the cut side of the garlic.
To serve, place the toasts onto a plate and top with the bean pâté.
