
2 tbsp vegetable oil
½ red onion, chopped
1 garlic clove, finely chopped
100g/3½oz pork fillet, minced in a food processor
3 strips marinated red pepper from a jar, chopped
½ tsp jerk seasoning
3 tbsp chopped fresh coriander
3 Little Gem lettuce leaves
1 orange, split into segments, to garnish
Heat the oil in a pan over a medium heat, add the onion and garlic and fry for 2-3 minutes, or until softened.
Add the minced pork, stir well, then add the chopped marinated pepper and the jerk seasoning and fry for 3-4 minutes, stirring well.
Remove the pan from the heat, add the chopped coriander and stir well.
To serve, place the lettuce leaves onto a serving plate and spoon a little of the spiced mince into each one. Garnish each filled lettuce leaf with an orange segment.
