
225g/8oz caster sugar
8 green cardamom pods, seeds removed and crushed
150ml/5¼fl oz water
150ml/5¼fl oz lime juice
1 tbsp grated lime zest or to taste
pineapple chunks or rings
Put the caster sugar, cardamom pods and water in a pan. Stir over a gentle heat until the sugar has dissolved.
Take off the heat and allow to cool before adding the lime zest. Mix and pour over the pineapple chunks or rings.
