
110g/4oz caster sugar
110g/4oz self-raising flour
110g/4oz butter
2 free-range eggs
1 carrot, grated
25ml/1fl oz milk
1 lemon, zest and juice only
butter, for greasing
Cream together the sugar and butter. Add the flour, eggs and milk. Mix thoroughly.
Add the grated carrot and mix to combine. Add the lemon zest and juice. Combine.
Place the batter in a large buttered ramekin. Microwave on high for five minutes. Serve
