
12 large kaffir lime leaves, plus 8 to garnish
180ml/6fl oz sugar syrup (made by boiling equal quantities of sugar and water together)
240ml/8½fl oz premium gin
240ml/8½fl oz freshly squeezed lime juice
cracked ice
soda water
Divide the kaffir lime leaves and sugar syrup between the glasses and using the end of a rolling pin lightly crush the leaves.
Add the gin, lime juice and ice and stir well.
Add some more ice and top with soda.
Stir once more and garnish with two kaffir lime leaves and a straw.
