
Celebrate the carnival in style with this fiery Caribbean cocktail using rum and ginger beer.
½ lime, juice only
dash angostura bitters
2 tsp clear honey
2 tsp strawberry syrup
50ml/2fl oz rum, preferably Jamaican
ginger beer, to top up
strawberry and fresh mint sprig, to garnish
Add a handful of ice to a tall glass then add the lime juice, bitters, honey, strawberry syrup and rum.
Stir the cocktail with a long-handled spoon, then top up with the ginger beer.
Garnish with the strawberry and fresh mint sprig.
