Guacamole and refried bean wraps with chilli syrup

Ingredients

For the guacamole
For the refried beans
For the wraps
For the chilli syrup
  • 2 tbsp soft brown sugar

  • 4 red chillies, de-seeded, thinly sliced

  • 2 limes, juice only

Preparation method

  1. For the guacamole, place all of the guacamole ingredients into a food processor and blend to a rough purée.

  2. For the refried beans, place all of the refried beans ingredients into a food processor and blend to a smooth paste.

  3. For the wraps, spread the tortillas with a spoonful each of the guacamole and refried beans, then roll up tightly into a sausage shape.

  4. For the chilli syrup, place the sugar, chillies and lime juice into a small saucepan and simmer gently for 4-5 minutes, stirring frequently, until the sugar has dissolved and the mixture is sticky but still pourable.

  5. To serve, pile the wraps onto a serving plate and drizzle over the chilli syrup.
