2.5cm/1in piece fresh ginger, peeled, roughly chopped
handful coriander roots
2 red birds’-eye chillies, seeds removed
2 limes, juice only
1 green papaya, peeled, shredded
2 tomatoes, diced
handful green beans, blanched, refreshed in cold water
2 carrots, peeled, julienned
small bunch fresh Thai basil leaves
small bunch coriander leaves
½ iceberg lettuce, shredded
Cooking ingredients
4 tbsp plain flour, seasoned with salt and freshly ground black pepper
vegetable oil, for frying
2 garlic cloves
100ml/3½fl oz soy sauce (or vegetarian fish sauce)
Dairy, eggs and chilled
200g/7oz beech-smoked tofu, cut into cubes (available from Asian supermarkets)
