Preheat oven 180C/350F/Gas 4.
For the chicken kiev, stuff the pocket in the chicken breast with the pepper and goats' cheese and close the pocket.
Sprinkle the flour and breadcrumbs onto separate plates. Dredge the chicken breast in the flour, then dip it in the beaten egg and dip into the breadcrumbs.
Heat the oil in a frying pan over a medium heat and fry the chicken for 5-6 minutes on each side until golden-brown all over.
Transfer to a baking tray and roast in the oven for 15 minutes or until the chicken is cooked through. (The chicken is cooked through when the juices run clear when pierced in the thickest part with a skewer.)
