
4 x 2.5xm/1in cubes pineapple (fresh or canned)
2cm/1in piece fresh ginger, peeled.
2 tsp pineapple juice
1 tbsp falernum syrup (spiced syrup, available from specialist suppliers)
35ml/1¼fl oz Jamaican rum
2 tsp lime juice
2 tsp vanilla syrup (available from specialist suppliers)
2 fresh pineapple leaves, to garnish
Place the pineapple into a cocktail shaker and mash (muddle) with the end of a rolling pin.
Add the ginger and mash well again.
Add the pineapple juice, falernum syrup, rum, lime juice, vanilla syrup and a handful of ice. Shake well and strain into a glass.
Garnish with two fresh pineapple leaves and serve.
