
500ml/17fl oz boiling water
2cm/1in piece fresh root ginger, peeled, sliced
3cm/1½in cube rock sugar or 2-3 tbsp soft brown sugar
Heat the water in a small saucepan and add the ginger pieces. Bring to the boil, add the rock sugar and reduce the heat to a simmer. Simmer for five minutes, then strain into a cup and serve.
