1 large lemon
1 large orange
1 medium bulb of fennel, roughly chopped
4 garlic cloves, peeled
1 medium red onion, roughly chopped
2 large handfuls of mixed fresh herbs - parsley, dill, tarragon, basil
salad and crusty bread, to serve
Tins, packets and jars
3 tbsp capers, drained
Cooking ingredients
extra virgin olive oil
flaked sea salt and freshly ground black pepper
Meat, fish and poultry
4 whole fish, approx. 350-450g/12oz-1lb each, gutted and scaled

You will need 12-16 lengths of string about 15cm/6in long, soaked in water for 1 hour.
