Place the egg whites into a bowl with the sugar and whisk until soft peaks form when the whisk is removed. Set aside.
Place the egg yolks, vanilla syrup, all spice, brandy and rum into a large heatproof jug and blend with a stick blender.
Add the hot milk and continue to blend until well combined.
Divide the mixture between two latte glasses or similar heatproof glasses, leaving a 5cm/2in gap at the top.
Top each drink with equal amounts of the egg white mixture and dust each with grated nutmeg.
