110g/4oz Y-Fenni cheese, or similar
30g/1oz flour
300ml/10fl oz milk
1 tbsp whole grain mustard
30g/1oz butter
1. Grate the cheese.
2. Put all the other ingredients in a pan. Put over heat and stir continually until you have a smooth sauce.
3. Add the cheese and heat until the cheese has melted. Add the mustard.
4. Serve.
