Sweet potato and spinach salad sweet potato

Serves 2

Cooking time 10 to 30 mins

Vegetarian Quick Recipe


Ingredients
½ sweet potato, peeled and diced
2 handfuls spinach
30g/1oz butter
seasoning
1 tbsp sesame seeds
1 tbsp olive oil
1 tsp white wine vinegar
salt
freshly ground black pepper


Method
1. Cook the sweet potato in plenty of boiling water until tender and drain.
2. Heat the butter in a pan and cook the spinach for 30 seconds until it just begins to wilt.
3. Add the spinach and sweet potato to a bowl and toss through all the other ingredients.
