1 tbsp olive oil
½ onion, sliced
1 garlic clove, chopped
150g/5½oz lamb chump chop, trimmed of fat, sliced
½ tsp chilli flakes
1 tsp sesame oil
1 tsp soy sauce
1 tbsp tomato ketchup
1 tbsp sesame seeds
1 tbsp clear honey
salt and freshly ground black pepper
1 tbsp chopped fresh chives, to garnish
1. Heat the oil in a frying pan over a medium heat and fry the onion and garlic for 2-3 minutes, until softened.
2. Add the lamb slices and stir-fry for 1-2 minutes.
3. Add the chilli flakes, sesame oil, soy sauce, tomato ketchup, sesame seeds and honey. Stir-fry until the lamb is completely cooked through, then season, to taste, with salt and freshly ground black pepper.
4. To serve, place the stir fry onto a plate and sprinkle with chives.
