Sweet and sour chicken chicken breast

Quick Recipe


Ingredients
1 chicken breast, skinned and sliced
2 tbsp olive oil
For the sweet and sour sauce:
½ pineapple, peeled and cubed
½ tsp chilli flakes
2 tbsp olive oil
½ tsp coriander seeds
1 lime, zest and juice
1 orange, zest only
1 tbsp tomato puree
stalks from a head of broccoli, sliced
salt
freshly ground black pepper


Method
1. Place all the sweet and sour ingredients in a pan and simmer for 10-12 minutes or until the pineapple is soft.
2. Season the chicken breast and fry in a pan with the oil for 4-5 minutes on each side until golden and cooked through.
3. Slice the chicken breast and serve on top of the sweet and sour sauce.
