4 fresh mint leaves
3 slices cucumber
50ml/2fl oz gin
1 lemon, cut into quarters
25ml/1fl oz shot fresh apple juice
2 tsp elderflower cordial
2 tsp peach liqueur
dandelion and burdock, to top up
To garnish
fresh summer berries
cherries
red apple slice
mint sprig
1. Fill a tall glass with ice. Add the mint, cucumber slices and 25ml/1fl oz of gin and stir briefly in the glass.
2. Place the lemon quarters into a cocktail shaker and mash (muddle) with the end of a clean rolling pin. Add the apple juice, elderflower cordial, peach liqueur and the remaining 25ml/1fl oz gin and shake well to combine.
3. Strain into the glass and top up with dandelion and burdock.
4. Garnish with fresh summer berries, cherries, a red apple slice and a mint sprig.
NB: To serve multiple guests, simply multiply all of the ingredients by the number to serve. Mix all of the ingredients except the dandelion and burdock into a punch bowl. Refrigerate well before serving and add the chilled dandilion and burdock when ready to serve.
