Stovies potato

Serves 2-4

Preparation time less than 30 mins

Cooking time 1 to 2 hours



Ingredients
50g/2oz dripping
2 large onions, sliced
500g/1lb potatoes, sliced
salt and pepper


Method
1. Put the dripping into a heavy-based pan and allow to become smoking hot.
2. Add the onions and potatoes with some salt and pepper. Lower the heat.
3. Cover closely and cook gently for a long time (up to 2 hours).
4. When cooked, stir up with a spoon. Good stovies must cook without burning and without the lid being lifted during the cooking. (You are allowed to take a little peep to see if it is ready after an hour or so!).
5. You can add small cubes of leftover roast meat for extra flavour and pleasure.
