Sprouts with pumpkin and chestnuts pumpkin
no chef Serves 8-10

Preparation time less than 30 mins

Cooking time 30 mins to 1 hour

Vegetarian


A simple winter vegetable recipe that will complement any main dish.

Ingredients
1 stalk of sprouts, taken off the stalk and halved if large
1 medium orange squash or pumpkin, peeled, deseeded and cut into 1cm cubes
340g/12oz chestnuts, cooked, peeled and chopped roughly
85g/3oz butter
2 tbsp chopped fresh parsley
salt and freshly ground black pepper


Method
1. Melt the butter in a large pan and add the pumpkin and sprouts. Season well, cover and cook very gently until both are tender, stirring from time to time.
2. Stir in the cooked chestnuts and heat through.
3. Stir in the parsley and serve at once.
