Spinach pizza with fried egg egg

Vegetarian Quick Recipe


Ingredients
For the pizza
225g/8oz self-raising flour, plus extra for dusting
2 tbsp chopped chives
50ml/2fl oz olive oil
1 tbsp milk
25g/1oz unsalted butter
2 cloves garlic, crushed
100g/3½oz spinach
2 tbsp tomato purée
salt and freshly ground black pepper
For the fried egg
1 tbsp olive oil
1 free-range egg
salt and freshly ground black pepper


Method
1. Preheat the oven to 200C/400F/Gas 6.
2. To make the pizza, mix together the flour, chives, olive oil and milk. Knead the dough together on a floured surface.
3. Roll out using a floured rolling pin to a circle measuring 30cm/12 inches across.
4. Melt the butter in a frying pan. Add the garlic and spinach and cook until wilted.
5. Line a baking sheet with non-stick paper. Place the dough on the paper and smear with tomato purée. Lay the spinach mixture over the tomato purée and season well with salt and freshly ground black pepper. Bake in the oven for 12 minutes.
6. To make the fried egg, heat the olive oil in a frying pan. Fry the egg and season with salt and freshly ground black pepper.
7. To serve, place the egg in the centre of the pizza and serve on a wooden chopping board.
