3lb (1.4kg) red cabbage
1lb (450g) onions - peeled and finely sliced
3oz (75g) butter
1 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground nutmeg
1 tsp crushed juniper berries
8oz (225g) dried, ready-to-eat prunes
6 tbsp light muscovado sugar
6 tbsp red wine vinegar
salt and freshly ground black pepper
1. Preheat oven to 150C/300F/Gas 2.
2. Shred the cabbage finely, discarding the core.
3. Place half the cabbage on the bottom of a casserole. Place half the onions on top and then half the spices, and the prunes.
4. Add half the butter in knobs and season with salt and pepper.
5. Top with the rest of the cabbage and the onions.
6. Mix the vinegar and sugar together and pour over the cabbage. Top with the final half of the butter.
7. Cover with a lid and bake for 3 hours, stirring occasionally, until tender.
8. Taste and adjust the seasoning.
