Spaghetti 'pizza' prosciutto

Quick Recipe


Ingredients
1 free-range egg
100ml/3½fl oz whole milk
3 tbsp plain flour
125g/4½oz fresh spaghetti, cooked for 2 minutes, drained and chopped
2 tomatoes, sliced
50g/2oz parmesan cheese, grated
2 slices prosciutto, diced
salt and freshly ground black pepper
5 fresh basil leaves, torn


Method
1. Ina clean bowl, combine the egg, milk, flour and spaghetti together until it forms a ball. Squash flat onto an oiled baking tray. Heat the grill to hot.
2. Cover with the sliced tomatoes, parmesan, prosciutto, salt and freshly ground black pepper and put under the grill for 4 minutes.
3. To serve, cut into six triangles and sprinkle with basil leaves.
