Sauteed squid with olive oil, garlic and parsley squid

Serves 4

Quick Recipe


Ingredients
450g/1lb squid
2 garlic cloves, finely chopped
25ml/1fl oz olive oil
a pinch of crushed dried chilli
1 tbsp fresh parsley, roughly chopped
juice of ¼ lemon
salt and freshly ground black pepper
lemon wedges, to serve


Method
1. Clean the squid and cut the body section into rings.
2. Quickly fry the garlic in hot olive oil and add the squid just as the garlic is beginning to brown. Add the seasoning and a pinch of chilli. Turn over and saute for 2-3 minutes. Add the parsley and lemon juice. Serve with more lemon wedges and chips.
