Satay sticks with pin wheel courgette breads beef steak

Quick Recipe


Ingredients
¼ sirloin steak, cut into long thin strips
120ml/4fl oz plain yoghurt
1 tbsp chives, chopped
For the satay marinade
1 lemon, zest of whole and juice of ½ only
1 tsp cumin seeds
3 tbsp olive oil
salt and freshly ground black pepper
For the courgette pin wheels
1 tsp cumin seeds
110g/4oz plain flour
½ tsp baking powder
30g/1oz butter
approx. 140ml/¼ pint milk
½ courgette, cut into long strips


Method
1. To make the satay sticks, mix all the marinade ingredients together.
2. Add the beef and coat.
3. Thread the beef onto skewers.
4. Heat a griddle pan and sear the beef on the satay sticks for 1-2 minutes.
5. Beat together the yoghurt and chives to accompany the satay.
6. To make the courgette pin wheels, put the cumin seeds, flour, baking powder and butter into a food processor.
7. Blend and then add just enough milk to form a dough.
8. Turn out onto a floured surface and form into a ball.
9. Roll out the dough to 0.5cm/¼in thick.
10. Lay the courgette strips out on top of the dough.
11. Roll up the dough to form a long sausage.
12. Cut into 3.5cm/1½in slices.
13. Place on a baking sheet and bake for 10-12 minutes.
