Sardine, Chickpea and Avocado Salad sardine

Quick Recipe


Ingredients
100g/4oz baby leaf salad
75g/3oz sardines, drained
200g/7oz chickpeas, rinsed
1 avocado, peeled and chopped
1 orange, segmented
1 tomato, de-seeded and chopped
½ medium red chilli, chopped
2 tbsp chopped fresh coriander
3 tbsp olive oil
1 tbsp balsamic vinegar
good pinch paprika
a good pinch chilli powder
salt


Method
1. In a medium bowl, mix together the salad leaves, sardines, chickpeas, avocado, orange, tomato, chilli and coriander.
2. In a separate small bowl whisk together the remaining ingredients and pour over the salad.
3. Serve immediately.
