Refried bean wrap

Serves 1

Preparation time less than 30 mins

Cooking time less than 10 mins

Vegetarian Quick Recipe


Ingredients
½ tin mixed beans
1 garlic clove, crushed
1 green chilli, finely chopped
handful fresh coriander, roughly chopped
2 tortilla wraps
75g/3oz cheese, grated
salt and freshly ground black pepper


Method
1. Put the drained beans in a pan with the garlic and fry for 2 minutes.
2. Remove from the heat and mash the beans with a potato masher.
3. Stir in the chilli, coriander and season with salt and freshly ground black pepper.
4. Lay the tortillas and spread with the refried beans.
5. Sprinkle on the cheese and roll up.
6. Cut the roll in two and serve.
