Red pesto pasta penne

Serves 4

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Vegetarian Quick Recipe


Ingredients
200g/7oz penne pasta
110g/4oz sunblush tomatoes
75g/3oz feta cheese
4-5 tbsp olive oil
1 garlic clove, peeled and crushed
1 lemon, juice only
large handful fresh basil leaves


Method
1. Bring a large pan of salted water to the boil.
2. Cook the pasta in the boiling water according to the packet instructions.
3. Remove from the heat, drain and return to the pan.
4. Place the tomatoes, feta cheese, olive oil, garlic, lemon juice and basil leaves in a food processor and blend together until smooth.
5. Stir the red pesto into the pasta and toss together.
6. Heat gently for a few minutes.
7. Remove from the heat and serve immediately.
