3 tbsp olive oil
1 red onion, chopped
900g/2lb red cabbage, finely shredded
2 eating apples, cored, peeled and sliced
5 tbsp light muscovado sugar
4 tbsp red wine vinegar
3 tbsp red currant jelly
½ tsp ground cinnamon
100g/4oz blanched whole almonds
1. Heat the oil in a large pan, add the onion and cook for 2-3 minutes. Stir in the remaining ingredients, except for the almonds. Season with salt and pepper, then cover and cook over a gentle heat for 30-35 minutes until the cabbage is tender.
2. Stir in the almonds just before serving so that they retain their crunch.
