Ingredients

For the salad
3 stems broccoli, cooked
8 small leeks, cooked
For the vinaigrette:
5 tbsp olive oil
75g/2¾oz, chestnuts, peeled and chopped
2 tbsp balsamic vinegar

Method

1. Cut the broccoli and leeks into three-inch pieces. Place into a large bowl and mix together.
2. To make the vinaigrette, place the chopped chestnuts into a bowl and mix with the oil and the vinegar.
3. Pour over the salad and serve.
