Sweet potato stew

Ingredients

2 tbsp olive oil
½ onion, chopped
3-4 cardomom pods
1 tsp coriander seeds
½ scotch bonnet chilli pepper, finely diced
2.5cm/1in fresh root ginger, peeled and chopped
½ sweet potato, peeled and diced
120ml/4fl oz water
4 tbsp Greek-style yoghurt
1-2 tbsp double cream

Method

1. Heat the olive oil in a large frying pan.
2. Add the diced onion and sauté for 2-3 minutes.
3. Add the cardomom pods, coriander seeds, the diced chilli, root ginger and sweet potato, stir well and cook for 2-3 minutes, before adding the water. Bring to the boil, then lower to a simmer and cook for 8-10 minutes, or until the sweet potato is tender.
4. Add the yoghurt and the cream and stir well. Serve.
