Ingredients

2 slices of ready-made Madeira cake 2 eggs, beaten 1 tbsp honey 30g/1oz hazelnuts, chopped 1 pear, cored and cut into slices knob of butter For the chocolate sauce 12 mint chocolates 55ml/2fl oz milk
Method

1. Dip the cake slices into the beaten egg to coat. 2. Heat a non-stick frying pan until hot and then add the cake slices. Add the honey and nuts to the pan and pan-fry for 2-3 minutes on each side, or until golden. 3. To make the chocolate sauce, place the mint chocolates in a bowl over a pan of simmering water and allow to melt. Add the milk to the bowl, stirring to combine. 4. Transfer the cake to a serving plate and drizzle the chocolate sauce over. 5. Heat a griddle pan until hot and melt the butter. Add the pear slices and griddle for 2-3 minutes on each side or until softened. Serve alongside the cake.
