Ingredients

For the stewed pineapple ½ pineapple, flesh removed with the shell intact 2 tbsp caster sugar 1 vanilla pod, seeds scraped out zest and juice of one orange For the meringue 2 free-range egg whites 2 tbsp caster sugar
Method

1. Pre-heat the oven to 180C/350F/Gas 4. For the stewed pineapple 2. Dice the flesh of the pineapple. 3. In a hot pan add the pineapple with the sugar, vanilla and orange zest and juice. Cook for three minutes until golden. 4. Place the pineapple flesh back into the pineapple shell. For the meringue 5. Whisk the egg whites until stiff, then add the sugar and mix thoroughly. 6. Place the mixture on top of the pineapple and place onto a baking tray in the pre-heated oven for 5-6 minutes until golden. 7. Garnish with the pineapple leaves and serve.
