For the steamed plaice 1 glass white wine 1 lemon, juice only 1 plaice fillet salt and freshly ground black pepper For the crispy noodles oil, for deep frying 85g/3oz noodles, cooked according to packet instructions
Method

1. For the steamed plaice, pour the glass of white wine and lemon juice into a saucepan and bring to the boil. 2. Place a steamer over the pan and put the plaice fillet inside it. Season to taste then put a lid on top of the steamer and leave to steam for 5-6 minutes. 3. For the crispy noodles, heat the oil for deep frying in a large saucepan or wok. When the oil is hot add the cooked noodles and deep-fry for 1-2 minutes, or until golden and crisp. (WARNING: take care as the noodles may spit when added to the hot oil.) 4. Remove the noodles from the oil and drain on kitchen towel. 5. Serve the steamed fish with the crispy noodles.
