Ingredients

250g/9oz steak 2 tbsp oil For the butter 50g/1¾ oz butter 25g/1oz Stilton 2 tbsp chives For the sweet potato fondant 1 sweet potato cut into thick slices 25g/1oz butter For the red cabbage ¼ red cabbage thinly sliced 50g/1¾ oz raisins 1 apple diced ½ glass red wine 50g/1¾oz brown sugar 4 tbsp of red wine vinegar
Method

1. Heat a griddle pan until hot. Rub the steak with the oil and season. 2. When the griddle is hot, cook for three minutes on each side, take off and let it rest. 3. For the Stilton butter, in a bowl mix the butter with the Stilton and the chives. 4. For the sweet poato fondant, in a medium pan boil the sweet potato in a pan of water with the butter and cover. Cook for 10 minutes. 5. For the red cabbage, place the red cabbage with the raisins, apple, red wine, dark brown sugar and vinegar, cook on a low heat for 15 minutes until thick. 6. To serve, place the sweet potatoes around the plate, the red cabbage in the centre. Place the steak on the cabbage and top with the butter.
